    Raspberry caviar. This year we are having a bumpe Raspberry caviar.  This year we are having a bumper harvest of raspberries in our urban farm and we have to try and preserve them . Once picked we freeze them down to -22 then crush them up to make little raspberry caviar balls. These melt in the mouth and are little flavour bombs .     This morning’s forage was for wild garlic capers This morning’s forage was for wild garlic capers. In season for only 2 weeks a year this is a forage trip we simply can’t miss out on. A lot work goes into preparing these little guys. First they have to be foraged then individually picked from the stems. Next we place them in a sweet pickle for 3 months and then and only then they are perfect.
